Zero-sugar drinks are everywhere now, from sodas to flavored waters, and the main selling point is simple. They taste sweet without adding sugar. The reason they still taste sweet is not a trick. Your tongue has sweet taste receptors, and many sweeteners can activate those receptors even in tiny amounts.

Most zero-sugar drinks use what the U.S. Food and Drug Administration calls high-intensity sweeteners, meaning they are much sweeter than table sugar so only a small amount is needed. The FDA lists six FDA-approved high-intensity sweeteners used as food additives in the U.S.: saccharin, aspartame, acesulfame potassium (Ace-K), sucralose, neotame, and advantame.

The key biology is the human sweet taste receptor, often described as the T1R2/T1R3 receptor (also written as TAS1R2/TAS1R3). Scientists have been trying to understand how one receptor can recognize so many different sweet molecules. A 2025 paper in Cell reported cryo-EM structures of the human sweet receptor bound to two widely used sweeteners, sucralose and aspartame, and explained how these compounds interact with the receptor to trigger sweetness.

This also helps explain why sweetness does not feel identical across products. Different sweeteners can interact with different parts of the receptor system and produce different “sweetness profiles,” such as a faster hit, a lingering sweetness, or an aftertaste. For example, a 2024 study in Communications Chemistry described how T1R2/T1R3 has multiple binding sites that allow activation by chemically diverse sweet ligands, including natural sugars and non-caloric sweeteners.

So why do zero-sugar drinks sometimes feel sweet but still “not quite like sugar”? Part of it is chemistry, but part of it is how real sugar behaves. Sugar does more than taste sweet. It adds thickness and changes how flavors spread across your tongue. When sugar is removed, manufacturers often adjust acidity, carbonation, and flavorings to keep the drink tasting balanced, but your mouth can still notice the difference in texture.

Another important point is health expectations. Many people assume non-sugar sweeteners automatically help with weight control, but the World Health Organization issued guidance in 2023 advising against using non-sugar sweeteners specifically as a weight-control strategy, based on their review of the evidence. The guideline focuses on the idea that replacing sugars with non-sugar sweeteners does not reliably lead to better long-term weight outcomes.

The most realistic way to think about zero-sugar drinks is that they are a tool. If you are replacing multiple sugary drinks a day, switching can reduce sugar intake. But if zero-sugar drinks simply keep you used to intensely sweet flavors all the time, they may not change your overall diet much. As the FDA notes, people choose sweeteners for reasons like reducing calories and generally not raising blood glucose the same way sugar does, but the “best choice” depends on your habits and goals.

In short, zero-sugar drinks taste sweet because sweeteners activate your sweet taste receptors, even without sugar. The taste can feel slightly different because sugar affects texture and flavor balance in ways sweeteners do not fully copy. And while sweeteners can help reduce sugar intake, major health organizations caution that they are not a guaranteed shortcut to long-term weight control.
